The Trip That Almost Didn't Happen
Let's be real โ this trip was completely last minute. I had some PTO sitting around, I had seen some beautiful places online, and I thought why not? I texted my photographer, he was in, his sister had Belize on her bucket list, and just like that โ we were going. Sometimes the best trips are the ones you barely plan, and Belize proved that completely.
We flew into Belize City and then hopped on a small connecting plane to get to San Pedro, a colorful, vibrant island town that immediately stole our hearts. We only had two full days I don't count travel days but what we packed into those days was nothing short of incredible.

Where We Stayed
We checked into a beautiful resort right in San Pedro and honestly the views alone were worth every penny. Waking up to water views every morning never gets old. The room had everything we needed great natural light, a full body mirror, a safe, a cozy bed, and a bathroom stocked with fresh towels. The vibe was relaxed, warm, and welcoming from the moment we arrived.
One thing to note bring your mosquito repellent. The mosquitoes are no joke, especially near the water and the mangroves. Don't say we didn't warn you.
Getting Around: Golf Carts & Bicycles ๐บ
There are no regular cars here everyone gets around by golf cart or bicycle and honestly it adds to the charm of the island completely. We rented a golf cart and cruised the colorful streets of San Pedro like locals. The wind in your hair, the bright painted buildings on either side, the ocean peeking through at every corner it's everything. Just a heads up, the wind is serious out here so keep that in mind for hair and outfit photos.

The Food: 10 Out of 10 Across the Board ๐ฆ๐ค
Let's talk about the food because Belize genuinely surprised us here. Every single meal was memorable.
Breakfast at Estelle's
Our go-to breakfast spot was Estelle's and it was so good. We ordered fried jacks โ a Belizean staple โ stuffed with eggs, cheese, ham and bacon. Paired with fresh watermelon juice that was so refreshing we ordered it twice. One of us even saved a fried jack for later as a midnight snack. No regrets. Highly recommend starting your mornings here.

Dinner on Night One
Our first evening we found a local spot and ordered barri tacos washed down with a spicy mango mojito โ which was exactly as it sounds. Spicy, fruity, and absolutely addictive. The food reminded us of Jamaica in the best way possible. Big portions, bold flavors, real ingredients.

Blue Bayou โ The Seafood Moment ๐ฆ

The seafood highlight of the entire trip was lunch at Blue Bayou. We ordered the seafood platter featuring lobster and let me tell you โ 10 out of 10, no notes. You can actually eat right on the water here which makes the whole experience even more special. Giant iguanas roam freely around the restaurant too, blending into the surroundings. Keep your eyes open because they are everywhere and they will catch you off guard.
Chef Restaurant โ Jerk Chicken Done Right ๐
We also stopped at Chef Restaurant for another meal and it was incredible. Jerk chicken with rice and peas, vegetables and plantain โ well seasoned, generous portions, and full of flavor. Solid 9.5 out of 10. Another must visit while you're in San Pedro.

Secret Beach ๐๏ธ
One of the highlights of the trip was visiting Secret Beach โ and the name absolutely fits. Crystal clear water, peaceful atmosphere, and stunning scenery in every direction. We hopped on the golf cart, wind blowing everything around, and made it out there for a mix of swimming, relaxing and taking photos. It's the kind of beach that makes you want to cancel your flight home and just stay forever.

Island Hopping to Caye Caulker ๐ข
On our last full day we took a water taxi over to Caye Caulker a tiny, laid back island that you explore almost entirely on bicycle. We rented bikes and rode around the whole island, stopped in hammocks by the water, browsed souvenir shops, grabbed some snacks and just soaked up the slower pace of life. The water surrounding Caye Caulker is impossibly beautiful โ that classic Caribbean blue that looks almost fake in pictures.
We picked up a little turtle souvenir to add to the collection โ if you know, you know. The island gives pure relaxation energy and is the perfect contrast to the slightly busier vibe of San Pedro.

The Outfits ๐โจ
Okay we have to talk about the looks because Belize delivered the most stunning backdrops for photos. Between the colorful streets, the turquoise water, the lush greenery and the golden hour sunsets โ every corner of this island is a photo opportunity waiting to happen.
Night one was silver and red, evening two was a flare off-shoulder top with jeans, beach days were bright bikinis in red, white and blue, and daytime was breezy white tops with blue skirts and silver jewelry. The hair held up through wind, water and humidity better than expected โ and that alone felt like a victory.

Final Thoughts ๐
Belize in just two full days felt like so much more. The food, the people, the scenery, the island energy โ everything about it was a full 10 out of 10. It was a last minute decision made on a whim and it turned out to be one of the most beautiful trips. Sometimes that is exactly how the best memories are made.
